Zucchini Bread

Ingredients:
3 eggs
1 cup of oil (veg, canola, olive) or half-cup oil, half-cup juice
2 cups of granulated sugar (white, light brown)
3 teaspoons of vanilla
2 cups of flour
2 teaspoons baking soda
¼ teaspoon baking powder
1 teaspoon of salt
2 teaspoons cinnamon
2 cups of grated zucchini
Optional – ½ cup nuts and/or ½ cup raisins.

Directions
1. Preheat the oven to 350 while your preparing pans and the zucchini bread batter.
2. Mix flour, soda, powder, salt and cinnamon together first in a big bowl.
3. Make a hole/well in the center of the flower and pour in eggs, oil/juice, sugar and vanilla together and then gradually mix into the flour.
4. Add the zucchini.
5. Put into two greased and floured loaf pans – 8” long or 9” long.
6.Cook at 1 hour at 350 degrees; both can go in together. A think foil pan might cook more quickly, so keep an eye on it near the end.7. It’s ready when it starts to pull away from the edges of the pan, is smelling good, and a stick or dry grass stuck into the middle comes back up without bits clinging to it.
