Angel Hair Pasta with Sun Dried Tomatoes

Ingredients
1 (8-oz) jar sun-dried tomatoes packed in oil, chopped
1 small onion, chopped
4 garlic cloves, minced
1 small can tomato paste
1 cup white wine
8 oz angel hair pasta
salt
black pepper, fresh ground
2 oz fresh feta cheese, crumbled
2 tablespoons chopped fresh Italian parsley leaves

Sauce Directions
1. Heat 2 tablespoons of the oil from the sun-dried tomatoes in a large skillet over medium heat.
2. Add the onion and saute until tender, about three minutes.
3. Stir in garlic and saute until fragrant, about 1 minute.
4. Add the tomato paste and cook for 2 minutes, stirring constantly.
5. Add the wine and sun-dried tomatoes and simmer until the liquid reduces be half, about 3 minutes.
Stop here if preparing the sauce in advance.  If preparing the day of, cook the pasta concurrently as preparing the sauce.

Pasta Directions
1. Bring a large pot of salted water to boil.
2. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes.
3. Drain, reserving 1/2 cup of cooking liquid.

Final Preparation
1. Add the pasta to the tomato mixture and toss to coat, adding some reserve cooking liquid to moisten if required.
2. Season the pasta, to taste, with salt and pepper.
3. Sprinkle with feta cheese and parsley and stir.
4. Mound the pasta into bowls and serve.  (Additional parsley can be used as garnish.)
